Waffle Breakfast Sandwich

INGREDIENTS

1 package Savory Original Breakfast Patties
2 cups flour
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
2 eggs
1 ½ cups whole milk
1/3 cup melted butter
8 slices of bacon, cooked and halved
1 tablespoon butter
4 eggs


DIRECTIONS

Preheat a waffle iron according to manufacturer’s directions.

In a large bowl, whisk together the flour, baking powder, and sugar.

In a separate bowl, whisk together the eggs, milk, and butter.

Combine the egg mixture with the dry ingredients and mix until just combined. Batter will be slightly lumpy.

Add the batter to the waffle iron and cook until golden brown. The recipe will make 8 medium sized waffles.

Cook breakfast patties in skillet over medium to medium-high heat for about 12 minutes, turning occasionally to brown evenly.

Cook the bacon according to package directions, then transfer to a cutting board and slice each piece in half. Do not clean the skillet.

Heat the skillet over medium heat and add the eggs to the pan, two at a time, frying for 2-3 minutes until set.

Top each waffle with 2 breakfast patties, a fried egg, four pieces of bacon and an additional waffle to create a sandwich.
