INGREDIENTS

1 Package Pure Farmland Simply Seasoned Protein Starters
1 large onion, diced
5 tsp. minced garlic
4 Tbsp. tomato paste
2 tsp. cinnamon
3 tsp. ground cumin
3 tsp. oregano
¼ tsp. ground cloves
¼ tsp. nutmeg
3 bay leaves
3 (14.5-oz.) cans of whole tomatoes, drained
2 potatoes, diced
2 red peppers, diced
2 Tbsp. red wine vinegar
6 cups cooked lentils
1 cup Lindsay Olives (Manzanilla Olives, sliced)
½ cup raisins (optional)
Salt & pepper to taste
Cooked rice, for serving
Cilantro & parsley, as garnish

DIRECTIONS


Place Plant-Based Protein Starters in a large skillet over medium-high heat. Break apart with spatula, adding onion & garlic after about 6 minutes. Cook until moisture has evaporated & product browns, approximately another 6 minutes. Onion & garlic should be soft.

Add tomato paste, spices, & bay leaves, heating until spices become fragrant & paste darkens. Add drained whole tomatoes, breaking apart with a spoon before adding diced potatoes, peppers, & red wine vinegar. Simmer covered until potatoes are soft.

Uncover & add lentils, olives, raisins, & salt & pepper to taste. Simmer until all ingredients are warmed through.

Serve immediately with rice. Garnish with parsley or cilantro. Enjoy!
