Vegan Kefta with Chermoula

INGREDIENTS

16-ounces Pure Farmland Simply Seasoned Protein Starters
½ small yellow onion, finely chopped
⅓ cup cilantro leaves & tender stems, finely chopped
⅓ cup parsley leaves & tender stems, finely chopped
¼ cup mint leaves & tender stems, finely chopped
2 heaping teaspoons paprika
1 heaping teaspoon ground coriander
1 heaping teaspoon ground cumin
for grilling: nonstick cooking spray, 8 small skewers
for serving, as desired: couscous, diced tomatoes, thinly sliced onion, fresh herbs,
chermoula sauce

For the chermoula sauce:

¼ cup extra virgin olive oil
1 lemon, zested & juiced
2 cloves garlic, finely chopped or grated
1 cup cilantro leaves & tender stems
½ cup parsley leaves & tender stems
¼ cup mint leaves & tender stems
1 heaping teaspoon ground coriander
1 heaping teaspoon ground cumin
1 heaping teaspoon paprika
optional: ½ teaspoon crushed red pepper
kosher salt & ground black pepper, to taste

DIRECTIONS


Prep: At least 20 minutes before grilling, soak bamboo skewers in water. Preheat your grill for medium-high direct heat grilling.

Make the kefta mixture: To a large mixing bowl, add the Pure Farmland Simply Seasoned Protein Starters, onion, cilantro, parsley, mint, coriander, cumin, & paprika. Using your hands, mix to combine.

Form the kefta: Divide the kefta mixture into 8 equal portions, then shape each portion around the prepared skewers. The mixture will be sticky; for easier handling, dampen your hands with water or lightly spritz with nonstick cooking spray.

Grill the kefta: Just before grilling, clean & oil the grill grates. Place the prepared kefta over direct flame. Grill for 8-10 minutes, flipping halfway through.

Prep the chermoula sauce: Meanwhile, as the kefta grills, prep the chermoula sauce. Add all listed ingredients to a food processor. Process until smooth & creamy. Taste & season with additional salt or ground black pepper as needed.

Serve: Serve the kefta with couscous & grilled veggies or a simple tomato & onion salad. Drizzle the chermoula sauce over top & finish with fresh herbs, to garnish. Enjoy!

Pour sauce over protein starters & veggies in large saucepan. Cover & allow to simmer until heated through, about 5 minutes.

Assemble sandwiches & enjoy!

Recipe Notes

Meal prep: The kefta mixture can be combined up to 2 days in advance. The flavors will develop & meld as the mixture sits. Prep in advance according to Step 2 of Recipe Directions, above, & store in an airtight container in the refrigerator.
