Tex-Mex Pasta Salad
1 package Pure Farmland Simply Seasoned Protein Starters
2 tsp. taco seasoning
1/4 cup tahini
2/3 cup salsa of choice
6 oz. cooked pasta of choice
1/2 cup frozen corn, thawed
1/2 red bell pepper, finely chopped
1/4 small red onion, finely chopped
10 cherry tomatoes, halved
20 olives, halved
1/4 head iceberg lettuce, shredded
1/4 avocado, finely chopped
10 tortilla chips, crunched
In a nonstick frying pan, cook the Pure Farmland Plant-Based Protein Starter according to package directions. Once it is cooked and browned sprinkle with taco seasoning and stir to combine.
Add the tahini and salsa into a blender and blend for about 30 seconds or until smooth.
In a large bowl combine the pasta, plant-based protein starter, corn, pepper, onion, tomatoes, olives, lettuce, and half of the dressing. Use a large spoon to toss and get everything coated and mixed.
Transfer to a serving bowl. This can be refrigerated or served right away.
Prior to serving pour the additional dressing overtop. Garnish with the avocado and tortilla chips.
