Stuffed Pepper Soup
1 Package Pure Farmland Simply Seasoned Protein Starters
1 cup uncooked white rice
1 tablespoon olive oil
1 small yellow onion
1 red bell pepper
1 green bell pepper
3 cloves garlic
10oz can diced tomatoes with green chilis
14.5 oz can fire roasted diced tomatoes
2 cups vegetable broth
½ teaspoon oregano
Salt to taste
Fresh parsley for garnish (optional)
Cook Pure Farmland Simply Seasoned Protein Starter according to package directions.
In a separate pot, cook rice according to package directions and set aside.
In a large pot, heat the olive oil over medium heat for 30 seconds.
Add the chopped onion and bell pepper and cook for 3 minutes, stirring occasionally.
Add the minced garlic and cook for 30 seconds.
Add the diced tomatoes, vegetable broth, cooked
Protein Starter, and oregano and simmer for 10 minutes.
Stir in cooked white rice and continue to cook for 10 minutes until heated through.
Generously add salt to taste and sprinkle with fresh parsley, if desired.
