Simply Seasoned Empanadas
1 Package Pure Farmland Simply Seasoned Protein Starters
2 tablespoons olive oil, divided
½ small onion, peeled and minced
2 tablespoons tomato paste
1 teaspoon cumin
1 teaspoon fresh oregano, finely chopped
½ teaspoon smoked paprika
½ teaspoon salt
1 cup finely shredded cheddar or Monterey jack cheese
2 tablespoons fresh cilantro
2 8oz packages empanada dough or crescent dough
Salsa or pico de gallo for serving
In a large nonstick skillet, add 1 tablespoon of olive oil.
Add the onion and cook over medium heat for 2-3 minutes.
Add the Simply Seasoned Protein Starter, tomato paste, cumin, oregano, paprika, and salt, and cook for 12 minutes over medium heat, using a wooden spoon to break apart the Protein Starter, until browned.
Add the shredded cheese and cilantro and mix until combined.
Lay the empanada dough flat on a baking sheet. Use your fingers to dampen the edges with a thin layer of water.
If using crescent dough, roll out the dough and use a 5” wide bowl to press circles into the dough. Cut the dough into circles.
Add 2-3 tablespoons of the protein mixture onto the center of the empanada dough.
Fold the edge of the dough over to form a semi-circle.
Use a fork to crimp the edges of the dough together.
Brush with remaining olive oil.
Bake for 18-22 minutes or until golden brown.
