Savory Egg Bites
1 Package Pure Farmland Savory Original Sausage Patty
2 tablespoons olive oil
1lb red potatoes, diced
1 yellow onion, diced
2 cloves garlic, minced
¼ cup half and half
2 cups shredded cheddar cheese
½ teaspoon salt
½ teaspoon pepper
Preheat the oven to 350 degrees.
Use a silicone muffin tray or line a muffin pan with silicone liners or parchment paper liners.
Cook breakfast patties in skillet over medium to medium-high heat for about 12 minutes, turning occasionally to brown evenly.
Transfer to a cutting board and let cool, then chop into 1” pieces.
In a second skillet, add the olive oil and heat over medium heat for 30 seconds.
Add the red potatoes and onion and cook for 15 minutes until potatoes are soft.
Add garlic and continue to cook for 30 seconds, until fragrant.
In a large bowl, add the eggs and half and half, then beat with a fork until combined.
Add the potato mixture, chopped patties, cheddar cheese, salt and pepper.
Bake for 20-22 minutes or until the edges begin to brown.
Tip: Eggs have a tendency to stick to traditional muffin pans. Silicone muffin pans or muffin liners make it easy to remove the egg bites from the pan.
