Protein Stuffed Avocado

INGREDIENTS

1 package Pure Farmland Savory Breakfast Patties, crumbled
1 ripe avocado
Green onions
2 eggs
Handful of shredded cheese (cheddar or mozzarella preferred)
Salt & pepper to taste**

DIRECTIONS


Peel avocado and remove pit. Set aside.

Finely chop green onions. Set aside.

Cook breakfast patties in a skillet over medium to medium-high heat for about 12 minutes, turning occasionally to brown evenly. After cooking, crumble patties & set aside.

Whisk eggs to scramble, then cook thoroughly.

Stuff each avocado halve with scrambled eggs, crumbled breakfast patties, cheese & green onions. Add salt & pepper to taste. Enjoy!
