INGREDIENTS

4 Pure Farmland Savory Original Breakfast Patties, crumbled
4 cups cubed hash browns
4 eggs, scrambled
16 oz. spinach
1 ripe avocado
2 bell peppers (yellow or orange recommended)
2 Tbsp. olive oil, divided
Green onions, thinly sliced (garnish)
Salt & pepper to taste







DIRECTIONS


Prepare the veggies: rinse spinach; peel & slice avocado into thin slices; julienne peppers.

Cook breakfast patties in a skillet over medium to medium-high heat for about 12 minutes, turning occasionally to brown evenly.

Cook hash browns according to package directions.

Scramble eggs.

Briefly sauté peppers over medium heat using olive oil until tender, about 6 minutes. Take off heat, add spinach & cover. Spinach should be just wilted. Salt & pepper to taste.

Divide eggs, hash browns, spinach & peppers into 4 bowls. Crumble breakfast patties into each bowl & top with sliced avocado. Add sliced green onions for garnish.
