Polenta with Italian Links
1 package Pure Farmland Italian Dinner Links
4 cups water
1 cup polenta
3 tablespoons butter
1/3 cup shredded Parmesan cheese
½ teaspoon salt
¼ teaspoon pepper
1 small red onion thinly sliced
1 cup thinly sliced sweet peppers, seeds removed
2 medium-sized tomatoes, peeled, cored, and chopped into 1” pieces
¼ teaspoon red pepper flakes
2 tablespoons fresh parsley, finely chopped
In a medium sized pot, bring the water to a boil.
Stir in the polenta and reduce heat to medium.
Cook the polenta for 4 minutes, stirring occasionally, until thickened.
Remove from heat and stir in butter, Parmesan cheese, salt and pepper.
Spray a large, non-stick skillet with non-stick spray.
Cook the Italian Dinner Links over medium heat for 6 minutes, turning occasionally to brown all sides.
Add the onion and peppers and sauté for 6-7 minutes until the vegetables have softened.
Add the tomatoes and red pepper flakes and continue to cook for 3-4 minutes until the tomatoes have cooked down and softened.
To serve, divide polenta into 4 bowls, then top with Italian links, peppers, onion, and fresh parsley.
