Plantain Brunch Bowl
4 Pure Farmland Breakfast Patties
1/2 Zucchini, chopped
1/2 C Chickpeas, rinsed
1 Medium ripe plantain
1/2 Avocado, sliced
Pickled red onions + jalapeños
Drizzle of cooking oil
Maple syrup, optional
Heat a pan on med-high heat with the desired amount of cooking oil. Place Pure Farmland Breakfast Patties on the skillet. Cook for 5 minutes on both sides for an even cook. Set aside.
In a bowl, combine chickpeas, zucchini, & seasonings. Mix well, coating all ingredients evenly.
In the same pan, heat the desired amount of cooking oil medium heat. Add seasoned chickpeas & zucchini to the pan. Cook for 5-7 minutes, frequently stirring for the best cook.
Peel & cut ripe plantain to the desired shape.
In a medium-size frying pan, heat cooking oil on medium heat. Fry plantain pieces for 5-8 minutes, flipping occasionally. Top with chopped cilantro.
Plate Pure Farmland Breakfast Patties, cooked zucchini & chickpeas, sliced avocado, pickled veggies, & fried plantain. Top patties with maple syrup.
