Mexican Tostadas

INGREDIENTS

1 Package Pure Farmland Simply Seasoned Protein Starters
1 teaspoon chili powder
1 teaspoon cumin
2 teaspoons fresh oregano, finely minced
½ teaspoon salt
1 small yellow onion, diced
1 small red or yellow bell pepper, diced
1 15oz can refried beans
8 crispy tostada shells
½ cup shredded cheddar cheese
½ cup sour cream
1 cup shredded lettuce
1 cup cherry tomatoes, chopped
¼ cup fresh cilantro, chopped



DIRECTIONS


In a large non-stick skillet, add the Simply Seasoned Protein Starter, chili powder, cumin, oregano and salt. 

Cook over medium-high heat for 10-12 minutes, breaking the protein starter apart with spatula until the moisture has evaporated and the protein starter browns.

Add chopped peppers and onions to the protein starter and continue to cook for 5 minutes until the vegetables have softened slightly.

Place the refried beans to a microwave safe bowl.

Microwave on high for 1 minute, stir and continue to microwave until heated through.

Spread ¼ cup refried beans on each tostada shell.

Top with ground beef mixture. Sprinkle with cheddar cheese, sour cream, chopped tomatoes, shredded lettuce, and fresh cilantro
