“Meatball” Flatbread Wrap

INGREDIENTS

1 Package Pure Farmland Plant-Based Homestyle Meatballs
1-2 Tbsp. of olive oil
2 tsp. minced garlic
1 Tbsp. lemon zest
1 Tbsp. lemon juice
½ tsp. dried oregano
½ tsp. ground cumin
¼ tsp. ground coriander
¼ tsp. paprika
Pinch of salt and pepper
4 flatbread wraps Arugula
2-3 Roma tomatoes
Spicy garlic sauce

SPICY GARLIC SAUCE INGREDIENTS

1 cup mayonnaise or sour cream (or ½ cup of each)
3 tsp. minced garlic
1 Tbsp. tahini
Sriracha to taste
½ tsp. lemon juice




DIRECTIONS

Preheat oven to 375°F. While oven preheats, place Pure Farmland Homestyle Meatballs in a medium bowl. Drizzle with olive oil. Add next 8 ingredients, gently tossing to thoroughly coat meatballs in spice mixture.

Place meatballs on aluminum foil-lined baking sheet coated lightly with nonstick cooking spray. Bake 15 minutes; gently turn meatballs over and bake an additional 8 to 10 minutes, or until internal temperature reaches at least 175°F.

Prepare the greens and tomatoes— rinse arugula and gently pat dry. Rinse and dice tomatoes.

Prepare the spicy garlic sauce— combine all sauce ingredients in a small bowl. Whisk together until all ingredients are incorporated. Set aside.

When meatballs are completely cooked, assemble flatbread wraps with arugula and diced tomatoes. Spread spicy garlic sauce on flatbread before assembling, drizzle on wraps, or use as a dip. Enjoy!
