“Meatball” Caprese Salad

INGREDIENTS

1 Package Pure Farmland Plant-Based Meatballs (Homestyle)
Cherry tomatoes
Mozzarella pearls
Baby arugula or baby spinach
Olive oil
Balsamic glaze
Basil, chopped



DIRECTIONS

Heat oven to 375°F. Place Pure Farmland Meatballs on aluminum foil-lined baking sheet coated lightly with nonstick cooking spray. Bake 15 minutes; gently turn meatballs over and bake an additional 8 to 10 minutes, or until internal temperature reaches at least 175°F.

As meatballs cook, halve the cherry tomatoes and combine in a large bowl with baby greens and mozzarella pearls.

Top salad with meatballs & drizzle olive oil & balsamic glaze over all ingredients. Sprinkle with chopped basil and enjoy!
