Jack o Lantern Chili

INGREDIENTS

1 lb Simply Seasoned Protein Starters
2 tablespoons olive oil
2 medium yellow onions, chopped fine
2 red bell peppers, chopped
½ teaspoon salt, plus more to taste
1 tablespoon chili powder
¼ teaspoon cayenne
1 ½ tablespoons cumin
1 teaspoon ground coriander
1 ½ teaspoons dried oregano
1 ½ teaspoons smoked paprika
1 28oz can diced tomatoes
1 cup pureed pumpkin
1 15oz cans black beans, drained and rinsed
Optional toppings: Sour cream, shredded cheddar cheese, tortilla chips

DIRECTIONS

In a large pot, heat the olive oil over medium heat for 30 seconds.

Add the onions, bell peppers, and 1/2 teaspoon of salt and cook until softened, about 5-6 minutes.

Turn heat to medium-high and add protein starter, cooking for 7-8 minutes until no pink remains.

Add chili powder, cayenne, cumin, coriander, oregano, and paprika and cook for 30 seconds.

Stir in diced tomatoes, pureed pumpkin, and black beans.

Bring to a simmer, then reduce heat to low.

Cover and continue simmer for 1 hour.
