Italian Skillet with Peppers & Onions

2 Tbsp. extra virgin olive oil
1 green bell pepper, sliced into 2 to 3 inch-long strips
1 red bell pepper, sliced into 2 to 3 inch-long strips
1 yellow bell pepper, sliced into strips 2 to 3 inch-long strips
2 tsp. garlic, minced
1 small onion, cut into strips
1 10-oz. can diced tomatoes with green chiles
2 tsp. Italian seasoning
1/2 cup red wine (optional)
1/2 tsp. red pepper flakes (optional)
Salt to taste
Add olive oil to large pan that with lid over medium heat. When the oil is hot, add the sausages and brown them slowly. Cook for several minutes, turning occasionally so they brown on all sides, approximately 14-17 minutes. Once browned, remove from the pan and set aside. Increase the heat to high and sauté the onions, peppers, and garlic. Toss to coat with oil in the pan and sear well, stirring every so often. When peppers and onions are soft, sprinkle salt and Italian seasoning on them.
Deglaze pan with wine (optional): Add the red wine if you are using. Scrape the bottom of the pan with a metal spatula or wooden spoon to release all the browned and blackened bits. Let the wine cook down by half.
Add tomatoes with green chiles, oregano, and red pepper flakes (optional) and stir well to combine. Cut sausage into 1-inch slices and add back into pan. Bring to a simmer then reduce the heat to low. Cover and simmer until peppers and onions are soft, and the sausage are cooked through, about 20 minutes.
