ITALIAN “SAUSAGE” AND KALE PIZZA BITES

INGREDIENTS

For the Pizza Bites:
8 oz. Mild Italian Pure Farmland Plant-Based Protein Starters
2 Tbsp. vegetable oil
2 cups kale, stems removed, chopped
2 cloves garlic, sliced
Pinch red pepper flakes (optional)
1 15-oz jar Alfredo sauce
1 16-oz package pizza dough
1 cup shredded mozzarella

DIRECTIONS

For the Pizza Bites:

Preheat oven to 375 degrees F.

Heat vegetable oil in a medium sauté pan over medium-high heat. Add protein starters and cook until lightly browned. Add chopped kale and garlic and cook for 2-4 minutes more or until kale is slightly wilted. Add Alfredo sauce and mix to combine. Add red pepper flakes if desired at this point and adjust seasoning with salt and pepper.

On a lightly floured work surface, roll pizza dough into a thin, even layer. Using a cookie cutter that’s slightly larger than the circumference of your muffin pan sections, cut rounds out of the dough.

Lightly oil the muffin tin and place dough rounds in each of the sections and form to the shape of the pan.

Place some mozzarella followed by the protein starter/kale mixture. Add more cheese on top and place in preheated oven.

Bake for about 15 minutes, until the cheese has melted and the crust is browned.
