Hawaiian “Meatball” Meal Prep

INGREDIENTS

plant based protein

1 Package Pure Farmland Plant-Based Meatballs (Homestyle)
1-2 cups cooked rice
1 cup of chopped pickled carrots
A sprinkling of sesame seeds
½ cup chopped scallions
Optional: Sriracha sauce and fresh cilantro for topping




DIRECTIONS

Heat oven to 375°F. Place plant-based meatballs on an aluminum foil-lined baking sheet coated lightly with nonstick cooking spray. Bake for 15 minutes; gently turn meatballs over and bake an additional 8 to 10 minutes until internal temperature reaches at least 175°F.

Cook rice according to instructions on the package.

Divide all ingredients evenly into 4 bowls or storage containers.

Seal each container with a lid and place in the fridge. When ready to eat, remove lid and heat in microwave for about 1 minute and 40 seconds or until heated through. Enjoy!
