Grilled Peach and “Meatball” Skewers
1 Package Pure Farmland Plant-Based Homestyle Meatballs
2 Tbsp. olive oil
½ to 1 tsp. chili powder
½ tsp. garlic powder
½ tsp. dried oregano
½ tsp. salt
½ tsp. cracked black pepper 2-3 ripe peaches
1 bell pepper (preferred color)
1 red onion
Balsamic glaze (optional) Skewers for grilling
Preheat oven to 375°F. Meanwhile, toss meatballs in olive oil with next 5 spice ingredients until thoroughly coated in a large bowl.
Place meatballs on aluminum foil-lined baking sheet coated lightly with nonstick cooking spray. Bake 15 minutes. Cut peaches, bell pepper, and onion into large pieces while meatballs bake.
Remove meatballs from oven and assemble skewers, alternating peach, bell pepper, onion and meatballs. Grill kebabs for about 15 minutes, or until peaches and veggies are slightly charred. Meatballs should have an internal temperature of 175°F. Drizzle with olive oil or balsamic glaze. Serve hot.
