Green Machine Salad with “Meatballs”

INGREDIENTS

1 Package Pure Farmland Homestyle Meatballs
1 head Bibb/butter lettuce
10 oz. spinach
1 ripe avocado, thinly sliced
8-10 small English breakfast radishes
Sprouts (broccoli preferred)
Sliced almonds (desired amount)
Shelled pistachios (desired amount)
⅓ cup olive oil
⅓ cup red wine vinegar
2 Tbsp. lemon juice
2 Tbsp. honey
Salt & pepper to taste

DIRECTIONS

Heat oven to 375°F. Place Pure Farmland Meatballs on aluminum foil-lined baking sheet coated lightly with nonstick cooking spray. Bake 15 minutes; gently turn meatballs over and bake an additional 8 to 10 minutes, or until internal temperature reaches at least 175°F.

Prepare the veggies: rinse lettuce & spinach leaves; peel & slice avocado; wash & thinly slice radishes.

Make dressing by combining olive oil, red wine vinegar, lemon juice & honey in a bowl. Whisk to combine, adding salt & pepper to taste. Set aside.

Combine lettuce, spinach, radishes, sprouts, sliced almonds & pistachios. Drizzle dressing over salad & toss to coat all ingredients.

Top salad with cooked meatballs & enjoy!
