French Toast Roll-Ups

INGREDIENTS

1 package Pure Farmland Maple Breakfast Links
8 slices of hearty white sandwich bread
3 large eggs
¾ cup milk
1 teaspoon vanilla
1 teaspoon cinnamon
¼ cup maple syrup
Powdered sugar for garnish (optional)

DIRECTIONS

Lightly coat skillet with non-stick cooking spray. Cook links in skillet over medium heat for 8 to 10 minutes, turning frequently to brown.

Remove the links from the skillet. Let the skillet cool slightly, then carefully wipe clean.

In a large, shallow dish, whisk together the egg, milk, vanilla, and cinnamon.

Dip each slice of bread into the egg mixture, flip the bread over to coat the other side, then allow any extra egg mixture to run off.

Spray the skillet with non-stick cooking spray
Cook the toast in the skillet, 1-2 pieces at a time, over medium heat for 4-5 minutes on each side, until the bread is golden brown.

Slice each piece of toast in half, and roll each breakfast link with ½ slice of toast.

Drizzle with maple syrup and sprinkle with powdered sugar, if desired.
