1 package Pure Farmland Simply Seasoned Protein Starters
2 Tbsp. coconut or olive oil
1 large onion
2 bell peppers, color of choice
2 ½ tsp. minced garlic
1 cup cut green beans (fresh recommended)
14 oz. canned diced tomatoes
1 ½ tsp. smoked paprika
2 bay leaves
Red pepper flakes to taste
1 ½ cups uncooked short grain rice (or preferred grain)
3 ½ cups vegetable broth
1/2 teaspoon turmeric
14 oz. canned artichoke hearts, drained
1 cup green peas
Salt to taste
Prepare the veggies: chop onion; deseed and chop bell peppers; cut green beans into thirds; drain and cut artichoke hearts (if canned); drain and rinse peas (if canned); set aside.
Heat Pure Farmland Protein Starter in a large skillet over medium-high heat. Break apart with spatula and cook until moisture has evaporated and product browns, about 12 minutes. Remove from heat and set aside.
Heat oil over medium heat in a wide-brimmed pan or Dutch oven. Add onions and bell peppers, cooking until tender. Add next 6 ingredients, cooking until all veggies are tender and spices are coating all ingredients, stirring regularly.
Add rice, vegetable broth, turmeric, and salt. Stir to incorporate all ingredients. Bring to a boil, then immediately reduce heat to medium-low. Do not stir. Cook uncovered for 12-15 minutes at a gentle boil.
Take pan off heat and add protein starters, peas and artichoke hearts. Cover dish and allow to steam for about 10 minutes.
Discard bay leaves, fluff rice and serve immediately!
