Flexitarian Breakfast Biscuits
4 Pure Farmland Savory Original or Maple Breakfast Patties, crumbled
8 biscuits (homemade or pre-made)
8 slices of bacon
8 slices cheddar cheese
2 ripe avocados
2 large ripe tomatoes
8 cups arugula
Prepare the veggies: peel & mash avocado; cut tomatoes into 8 slices; rinse arugula.
Bake biscuits according to package directions. Turn off oven & allow biscuits to cool slightly. This will help hold their structure later when assembling sandwich.
Cook bacon according to package directions. Set aside.
Cook breakfast patties in a skillet over medium to medium-high heat for about 12 minutes, turning occasionally to brown evenly.
Cook eggs as desired; over-easy eggs pictured.
Assemble breakfast biscuit sandwich: slice biscuit in half, spreading avocado onto the inside top half. Add breakfast patty, eggs, cheese, bacon, tomato & arugula.
Repeat assembly with remaining biscuits. Enjoy!
