Cuban Rice Bowl

INGREDIENTS

2 Pure Farmland Simply Seasoned Burger Patties
1 cup cooked brown rice 
1/3 cup rinsed black beans 
1 cup fresh pineapple cubed 
1 avocado chopped 
1 lime
1 Tsp. chopped garlic 
1 Tsp. cumin 
1/2 Tsp. oregano
1/4 Tsp. salt 
1 orange, juiced 
2 Tsp soy sauce 

DIRECTIONS

Cook patties in skillet over medium heat for about 12 minutes, turning once after juices appear on surface.

While the burger patties are cooking, chop the pineapple and avocado. Toss the avocado with the juice of 1/2 lime so it doesn’t brown.

Remove burger patties and set aside. Return the pan to medium heat and add the diced garlic, cumin and oregano. Cook for one minute and add the salt, orange juice and soy sauce. Cook until the sauce is reduced by half. 

While the sauce is cooking, microwave the rice and mix with the black beans. 

Assemble the bowls, each with 1/3 of the pineapple, avocado, rice & beans and chicken. Top the burger patties and serve with the other half of lime cut into wedges.
