Crunchy Kale Tomato Bowls
1 lb Simply Seasoned Protein Starters
8 large tomatoes(beefsteak)
1 1/2 cups packed sweet kale mix
1⁄4 cup goat cheese or Feta crumbles
1⁄4 cup roasted pepitas
1 clove garlic minced
Salt/pepper to taste
Preheat oven to 350 degrees.
Cut lid of tomatoes and remove flesh and seeds. Set on a parchment lined baking sheet.
Dice removed tomato flesh.
In a skillet, on medium heat, add evo, then garlic until soft and fragrant. Add tomatoes.
Add salt, pepper, and pure protein starters. Cook until heated thru, breaking crumbles into little chunks.
Add kale mixture. Stir until well combined.
Return to heat until simmer.
Divide mixture packed into prepared tomatoes.
Top with cheese crumbles.
Place baking sheet with stuffed tomatoes on middle oven rack.
Bake for 15 minutes until tomatoes start to soften and skin starts to peel.
Remove from oven. Place two tomatoes on plate and top with pepitas.
