Cornbread Muffins

INGREDIENTS

1 package Pure Farmland Maple Breakfast Links
1-1/4 cups all-purpose flour
3/4 cup yellow stone-ground cornmeal
1/4 cup plus 2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons honey
2 large eggs
3/4 cup buttermilk
1/2 cup unsalted butter, melted and cooled

DIRECTIONS

Preheat oven to 350 degrees

Line a muffin pan with paper or silicone liners and set aside.

Lightly coat a large skillet with non-stick cooking spray. Cook links in skillet over medium heat for 8 to 10 minutes, turning frequently to brown.

Remove the link from pan and let cool, then chop into 1” pieces.

In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.

In a separate bowl, combine the eggs, honey, buttermilk, and melted butter.

Add the wet ingredients and the chopped sausage links to the dry ingredients.

Gently mix until lumpy. Do not overmix.

Fill each muffin cup with ½ cup of batter.

Bake for 18-20 minutes until golden.
