Corn and Green Chile Con Queso

INGREDIENTS

8 oz. Pure Farmland Plant Based Protein Starters
1 Tbsp. vegetable oil
1 cup diced white onion
1 jalapeño, seeded, diced
2 garlic cloves, peeled, minced
1-14 oz. can fire roasted tomatoes
1-4.5 oz. can green chiles, drained
1-14 oz. can fire-roasted corn, drained
1 tsp. chili powder
2 lb. Velveeta® cheese, cubed
2 cups Pepper Jack cheese
Tortilla chips of choice for serving

DIRECTIONS


Heat vegetable oil over medium heat in a heavy-bottomed Dutch oven or sauce pot. Add plant-based protein and cook until well browned. Remove to paper towel-lined plate and reserve.

To same pot, add onion and jalapeño. Cook until softened, approximately 5 minutes. Add garlic and cook for an additional 2 minutes.

Stir in tomatoes, green chiles, corn, reserved protein, and chili powder. Stir to combine.

Reduce heat to low, add in cheeses, and stir until melted.
