Breakfast Burrito

8 oz. Pure Farmland Simply Seasoned Plant-Based Protein Starters
2 Tbsp. vegetable oil
1 medium russet potato, diced
1 small red onion, chopped
1 small red bell pepper, chopped
8 large eggs
½ tsp. kosher salt
½ tsp. black pepper
1 ½ cups shredded sharp cheddar cheese, divided
4 (8-inch) flour tortillas
¼ cup chopped fresh cilantro
1 cup blue corn tortilla chips, crumbled
Cooking spray
Optional toppings: sour cream, diced avocado, salsa, or hot sauce


Heat oil in a large nonstick skillet over medium-high. Add the protein starters and cook until browned and cooked through. Remove and set aside on a paper plate lined with paper towel.

Add the potato to the hot pan and cook, stirring frequently, until almost tender, about 7 minutes. Add the onion and bell pepper, and cook, stirring occasionally, until the potatoes are tender inside, crispy on the outside, and the onion and bell pepper are tender and lightly browned, about 5 minutes. Transfer to the plate with the protein starters.

Wipe the skillet clean, and place over medium. Spray the skillet with cooking spray. Whisk together the eggs, salt, and pepper until well blended; pour into the skillet, and sprinkle with ½ cup of the cheddar cheese. Cook, stirring and scraping the bottom of the pan constantly, until the eggs are scrambled to the desired degree of doneness and the cheese is melted. Remove the scrambled eggs to a plate, and wipe the skillet clean again.

To assemble the burritos, lay the tortillas flat on a work surface. Sprinkle some of the remaining sharp cheddar cheese evenly down center of the tortillas, leaving a 2-inch border around the edge. Divide the protein starters/potato mixture, scrambled eggs, and cilantro evenly among the tortillas, spooning over the cheese. Sprinkle with blue corn tortilla chips. Fold opposite sides of the tortilla over the filling, and roll up.

Place the skillet over medium-high. Lightly spray each burrito with cooking spray, and cook, seam side down, until lightly browned, 1 to 2 minutes. Turn and cook until lightly browned and the cheese is melted, 1 to 2 minutes. Serve immediately with optional toppings.
